A One-Pot Recipe: Cajun Salmon Bites & Shrimp over Broccoli

These bite-sized pieces of blackened, glazed salmon are each delightfully delicate and flaky, not to mention flavorful. Oh, and the greatest part is that they just require a few basic ingredients and less than 30 minutes to prepare. These tasty and healthful salmon bites are the perfect fish recipe to whip up quickly and easily for the family or some guests.
Shrimp and Broccoli was one of the most popular meals in my parents’ Chinese eatery. It makes sense given the pairing of wholesome broccoli and opulent shrimp. The recipe for Shrimp and Broccoli originally called for a white sauce flavored with garlic, but the majority of diners changed the request to read, “Make it with brown sauce!” I’ve made it several times this last week, so I understand why. Nobody can resist dipping their steaming white rice in that flavorful, dark brown sauce.
What you need
1 lb. of salmon (in bite size pieces)
1 lb. of shrimp, peeled and deveined
2 cups broccoli florets
½ cup olive oil (for sautéing the salmon)
1/3 cup mayonnaise (for the avocado cream sauce)
½ lime, juice only (to make the avocado cream sauce)
One thing you should know about cream is that it can be used in a variety of ways: as an ingredient for soups and sauces; as an ingredient for frosting or whipped cream; simply poured over your favorite dessert; or added to coffee or tea as a topping! Cream is even used in cooking and baking because it helps provide flavor without adding too much fat or calories to recipes—in fact, if you’re trying to keep track of your daily calorie intake but still want an indulgent treat once in awhile (like my husband), one tablespoon of heavy whipping cream only has 51 calories!
Marinade/Dressing
To make the marinade/dressing, place all of the ingredients in a large bowl and whisk to combine. Add the salmon and shrimp to the marinade/dressing and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
What to do
Combine all ingredients in a bowl.
Bake at 350 degrees F for 20 minutes, or until salmon is cooked through.
Serve with broccoli and/or rice.
Instructions
Step 1
After cleaning, pat dry each salmon filet.

Filets are cut into cubes; the cubes are then placed in a bowl, drizzled with olive oil, and then seasoned with lemon pepper and Cajun spice (ensuring that each cube has seasoning on it). The cubes then are left aside.
Step 3
For only a few minutes, heat the canola oil in a medium skillet.
Step 4
Mix the flour and cornstarch on a dish with a fork while the oil is heated.
Step 5
Once the oil is heated, dip and coat each salmon cube in the flour mixture before placing it in the skillet.
Step 6
Depending on thickness, cook salmon cubes for 3–4 minutes on each side.
Step 7
Put them on a platter with a paper towel after they’re finished (to drain any excess oil)
Honey-garlic Cajun sauce
Step 8
In a small glass bowl, combine all the ingredients. Microwave for no more than 30 seconds.
Step 9
Pour the sauce over the bits after thoroughly stirring it.
Reheating Salmon
Although this salmon tastes great cold, you may reheat it if you like.
Pre-heat your oven to 275°F (135°C) before reheating your salmon bits there. Your salmon bits should be completely cooked after 10 to 15 minutes of warming on a sheet pan.
The salmon bites may also be heated in the air fryer by setting the air fryer to 350°F (176°C) and placing the salmon bites inside. Cook for 4-5 minutes, or until completely warmed through.
Notes
Use single salmon filets, however fresh salmon is also acceptable (I buy a package of frozen, individually-wrapped salmon filets and use four of them). Depending on how spicy you want it, you can add more or less hot sauce. Instead of spreading the sauce over the bite, you may alternatively use it for dipping.
You may use frozen or fresh salmon filets to make these salmon bites. Additionally, you may turn them into delicious salmon bits for air frying. In other words, it’s the best salmon dish to keep in your back pocket for anytime you’re craving this wholesome seafood.
