Cake Popsicles – The Best Sweet Treat
Summer’s here and that means it’s time for popsicles. But why settle for boring flavors like strawberry or lime when you can enjoy cake popsicles?
These easy recipes are perfect for the heat and will keep your guests full of energy when they’re done eating. We’ve created three unique flavors to help get you started: red velvet, chocolate mousse and lemon curd. Try them out today!
For the base
Here’s what you’ll need:
- Cake mix
- Eggs
- Yogurt (or sour cream)
- Cooking spray (to grease your baking pan and hands)
- Parchment paper for lining the bottom of your pan, if necessary. If you don’t have parchment paper, use regular waxed paper but don’t forget to oil it first! Oil will keep the cake popsicles from sticking to their molds. They’re going to be in there long enough that they’ll stick anyway though, so don’t worry about it too much if you don’t have any oil or parchment on hand. Just make sure that whatever surface holds your cake popsicles has been greased with some sort of oil before placing them down into their molds—otherwise they could get stuck together as they freeze together. It might take a few tries before getting everything just right!
Instructions
- Preheat oven to 350 degrees. Grease a 9×13 pan with nonstick cooking spray and set aside.
- In a large bowl, mix together the cake mix, yogurt and eggs until very well combined (it’s going to be thick). Pour batter into prepared pan and spread out evenly. Bake for 30-35 minutes or until cooked through. Remove from oven and let cool at least 15 minutes before cutting into squares or rectangles for easier handling later on your popsicles sticks!
- Use an ice cream scoop or tablespoon measurer to scoop out 2 oz portions onto wax paper lined baking sheet; freeze 20 minutes; dip in melted chocolate mixture then transfer back onto baking sheet; repeat with remaining batter then freeze until solid (this will make it easier to dip them in chocolate.
- Crumble the cake into a large bowl using your hands or a spoon. Set aside.
- Line the bottom of a plastic container with parchment paper to prevent sticking. I used an 8×8″ square container, but you can use any size that will fit your popsicle sticks!
- Begin by making the cake popsicles.
- Cream together 1 cup butter, 2 cups sugar and 2 eggs until fluffy.
- Stir in 4 cups flour, 1 teaspoon baking soda and 1 teaspoon salt until blended well; add 2 teaspoons vanilla extract and mix until combined (about 30 seconds). Pour into 1/2, sheet pan lined with parchment paper; bake at 350 degrees F for about 20 minutes or until a toothpick inserted in the center comes out clean (it may take more time if you have a larger pan). Remove from oven once done and allow to cool completely (you can also place it in refrigerator if needed).

Add-ins and Variations
- Add toffee bits: Toffee, flavored candy or nuts, such as chopped Heath bars or almonds.
- Add M&Ms: Chocolate, covered M&M’s are a delicious addition to these popsicles. You could also use chocolate chips instead of plain ones for an added burst of chocolate flavor and color in every bite!
- Add peanut butter: To make these chips extra rich and flavorful, substitute peanut butter for part of the butter called for in the recipe.
