Chicken and Sausage Jambalaya Casserole
Jambalaya is a classic Louisiana dish that’s easy to make. It’s got everything you need in one pot and can be served over rice or pasta as well.
This traditional and delectable Creole cuisine will impress your family and guests, and best of all, it is simple to prepare in the oven. It goes without saying that there were no leftovers from the enormous roaster pan I brought to a neighborhood fish feast.
Ingredients
- 4 chicken breasts
- 2 links of smoked sausage, cut into small pieces
- 1 onion, chopped
- 1 cup celery, diced
- 2 cloves garlic (or more if you like it garlicky)
- 1 green bell pepper (optional) * If you want to add some color and flavor to this dish, feel free to chop up a red or yellow one as well! I would probably use half of what I would normally use for a normal recipe because it doesn’t make much difference in terms of taste but knowing that there is extra color on my plate makes me happy.
- 2 teaspoons salt: This level of seasoning may quickly become too much for some diners’ tastes—but if you’d like on the side of caution when making these spicy snacks for a crowd who doesn’t mind a bit more spice than others might find comfortable, this amount could work well as long as everyone agrees beforehand that they’re okay with their food being extra-seasoned before digging in. Again, we recommend tasting each batch before serving just in case!
Instructions
- Cook the sausage, chicken and onions in a large skillet over medium heat until browned, about 8 minutes.
- Brown sausage in hot oil over medium heat until cooked through (about 10 minutes). Remove sausages from pan using tongs or spatula; set aside on paper towels to drain off excess fat before chopping into small pieces; return chopped sausage back into pot once cooled enough so that they won’t burn your hands when handling them directly (at least 5 minutes should suffice).
- Add the rice and vegetables to the pan and cook until tender, about 10 minutes more or until all of your ingredients are cooked through.
