This Is The Most Delicious Greek Breakfast Pizza You’ll Ever Eat

Pancakes, pizza and ice cream are three things that I would eat for breakfast if I could. With today’s recipe, you can have all three at once. This is a fun way to start your day with something sweet and savory and it will keep you full until lunchtime!

INGREDIENTS

When you’re writing out the ingredients of a recipe, be sure to follow these guidelines:

  • Ingredients should be listed in order of quantity, from most to least. For example, if you are making a cake using 2 cups flour and 2 eggs, then your list would look like this: Flour (2 cups), Eggs (2).
  • Ingredients should be listed in order of importance. The main ingredient is always listed first and the others follow it by category or weight—for example: Butter (1 cup) Flour (2 cups) Sugar (1 cup).
  • Alphabetical order is boring! Instead, try listing ingredients in how they were used or prepared—for instance: “To make garlic bread”: ½ stick butter; Slice baguette into three pieces lengthwise; Drizzle with olive oil and sprinkle with freshly-crushed black peppercorns; Place under broiler for 3 minutes until golden brown on top side.

1 avocado, halved and pitted

Cut avocado in half lengthwise, then again width-wise to create 4 squares. Using a sharp knife, remove the pit from the center of each square by slicing down one side of it, then rotating your knife around the pit until it comes free from its skin. Halve and pit remaining avocados for use later in this recipe (if you’re serving only 2 people).

Lemon or lime

Juice the half a lemon or lime. This is optional, but it adds an element of flavor to the pizza that’s hard to beat.

1/4 teaspoon salt (optional)

Just a tiny pinch of salt is all you need for flavor, but if you’re using feta cheese or other salty toppings like bacon or prosciutto, you may want to add some. You can use any kind of kale—curly kale works well for this recipe because its leaves are bigger than the more delicate lacinato kale.

1/8 teaspoon black pepper (optional)

Get yourself a pinch of black pepper and sprinkle it on the pizza. It adds a nice kick to the dish!

2 ounces soft goat cheese or feta cheese crumbles

In a small bowl, combine the cheese and eggs. Mix until combined. Spray a large skillet with nonstick cooking spray and place it over medium heat. Once hot, pour in the egg mixture and cook for 3-5 minutes or until cooked to your liking (I recommend flipping at 2 1/2 minutes). Remove from heat and transfer onto a plate to cool slightly before topping with tomato salsa, fresh basil leaves and ketchup (optional). Slice into four pieces and serve!

1 tablespoon capers, chopped

Capers are the brined flower buds of a bush native to the Mediterranean, and they’re a common ingredient in Mediterranean and Middle Eastern cuisine. Capers blended with fresh herbs like rosemary and thyme make an excellent Italian pesto sauce. They can also be used to flavor vinaigrette dressings, or simply sprinkled over salads.

1/4 cup kalamata olives, sliced in half (approximately 12 olives)

Olives are a popular ingredient in Greek cooking. They are also high in monounsaturated fats, which can help lower “bad” LDL cholesterol levels and decrease inflammation. You can use any type of olive for this recipe, but kalamata olives seem to be the most popular variety!

2 eggs

Cooked to your liking scrambled or fried are popular methods or even poached with eggs poached in a hole in the middle of the pizza! If you’re looking for an easy way to get in your protein and fat, eggs are a great choice. They’re easy to cook no matter how you prefer them: scrambled or fried, poached in the middle of the pizza with eggs poached in a hole in the middle of the pizza! Eggs are also inexpensive, so you can save money when making this dish.
