Homemade Healthier Fudge Brownies

These healthy fudge brownie are so fudgy and delicious you wouldn’t believe they’re healthy!

What is Fudge Brownies

Fudge brownies are made with a super, rich, fudgy chocolate brownie base. They are typically made with butter and oil, but this recipe swaps those greasy ingredients for coconut oil. The result is a rich and fudgy treat that is easier on your waistline and your conscience!

Ingredients

  • 2/3 cup of coconut sugar
  • 1/2 cup of cocoa powder
  • 1/2 cup of melted coconut oil
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking soda , 1/4 teaspoon of salt

Instructions

  • Preheat oven to 350°F.
  • Grease a 9×9 baking pan.
  • In a medium bowl, mix together the dry ingredients: flour, cocoa powder, baking powder and salt.
  • In a large bowl, mix together the wet ingredients: eggs (or egg substitute), vegetable oil or coconut oil (or melted butter if not vegan), vanilla extract and sugar/honey/agave nectar until well combined.
  • Add in chocolate chips if using them! Mix them into your batter by hand with a spatula because they tend not to stick together when mixed throughly enough, , you don’t want lumps!

Cooking Notes

Cooking time will vary based on the size of your brownies. If you want a fudgier brownie, cook for less time and vice versa. If you’re looking for a more cake, like texture, try adding more flour to the batter.

Pro Tip

To ensure your brownies are as good as they can be, use the best quality chocolate you can find. Go for something that’s 70% or higher cacao content. For cocoa powder, don’t just go for the cheapest one—you want to use a high, quality cocoa powder that doesn’t include any added sugar or oils. And of course, use a vanilla extract with plenty of flavor (check the label). Finally, use butter from grass, fed cows if at all possible and salt sparingly but generously!

The rest is pretty standard: good quality sugar and flour will yield brownies with a nice texture, while eggs should be free range/organic if possible. Use also the best quality ingredients you can find for brownies.

Add-ins and Variations

  • Chocolate chips: You can add up to 1 cup of chocolate chips to this recipe.
  • Peanut butter: Instead of oil, use 1/2 cup creamy peanut butter.
  • Nuts: Add 2 cups chopped nuts (any kind you like) and reduce the flour by 1/2 cup.
  • Coconut: Use coconut flour instead of all, purpose, or half coconut and half almond flour if you don’t have any on hand.
  • Fruit: Add 1 cup of fresh fruit (chopped) or frozen berries after beating in eggs and before adding remaining ingredients.
  • Coffee: Instead of water when baking, try substituting a tablespoon or two of strong brewed coffee for some liquid.
  • Mint fudge brownies are delicious with just about any flavor combination! Just add a handful fresh mint leaves at the end before baking.
  • Cinnamon fudge brownies pair well with almost any nutty crunchy topping such as crushed peanuts or walnuts sprinkled over top just before serving.
  • Vanilla bean adds depth and complexity to these brownies; just split open one bean lengthwise and scrape out seeds into batter before mixing everything together in step 6 above!.
  • If you want a thicker fudgey brownie, use less liquid (about 2 tablespoons less). If your brownies are too dry, add another tablespoon of water or milk.
