Louisiana Dirty Rice: The Secret to Having A Filling, Delicious and Affordable Meal

Method

  • Brown the sausage in a large pot over medium heat, breaking it up as you cook.
  • Add the chicken stock and bring to a boil, then add the rice and stir well until combined with the sauce and sausage bits.
  • Cook for 20 minutes or until the liquid is absorbed by the rice, stirring occasionally so that no grains stick to one another and burn on bottom of pan (this happened to me).
  • Add green bell pepper and celery; season with salt, pepper, cayenne pepper, onion powder & garlic powder; cook 5 minutes more until vegetables are tender but not mushy (they should still have some bite).

Add-ins and Variations

The most common add-ins to dirty rice are chicken, sausage, and vegetables. You can also experiment with other meats or grains such as beef or pork. For example:

  • Add chicken for an even heartier meal.
  • Add a vegetable. Try green peas or chopped carrots!
  • Use your favorite spice blend or dry rub on the meat before cooking it in the skillet. This will help flavor the dish and give it more depth of flavor.
  • A sauce like béchamel sauce (or another creamy white sauce) is delicious drizzled over top of this dish before serving it up hot off the stovetop! It adds just enough richness without being overwhelming while also adding a little more moisture back into every bite after all that stirring has dried out all those bits of rice!

This recipe is a cinch to make, but you may need some help from the kitchen staff. If you’re cooking for a crowd, add more liquid and use more rice. You can also switch out the water for chicken stock for an even richer flavor. If you’re using a meat thermometer to check on the doneness of your rice, be sure to insert it into a few grains of rice near the center of the pot so as not to puncture any of them with your instrument.
