Ingredients
1 cup of rice
1 cup water
1/2 cup sugar
1/2 teaspoon salt
1/2 cup milk
1/2 cup cream
1/2 teaspoon vanilla
- In a medium saucepan over medium heat, combine the rice, water, sugar and salt. Bring to a boil, then reduce heat to low and simmer for 15 minutes or until all liquid has been absorbed by the rice.
- Remove from heat and stir in the milk and cream until combined well; cover with a lid for about 5 minutes so that it can absorb some of their flavors

- Bring the milk to a boil in a large saucepan.
- Add the rice and sugar, reduce heat to low and simmer for about 30 minutes, stirring frequently until the rice is tender and most of the liquid has been absorbed (the pudding will be slightly soupy).
- Remove from heat; stir in vanilla extract and cinnamon powder/cinnamon stick to taste (this should be added at this point if you don’t want any chunks of cinnamon or vanilla beans in your pudding).
- Let cool completely before serving with fresh fruit or whipped cream on top if desired!
