A Calorie-Saving Feta Cheese Tortilla Sandwich Recipe

Feta Cheese Tortilla Sandwich is a quick recipe that can be made with few ingredients. This Greek tortilla sandwich is loaded with fresh spinach, tomato, and feta cheese. The combination of these ingredients makes this a great lunch or dinner option for anyone who loves Greek foods!

What is Feta Cheese Tortilla Sandwich

The Greek tortilla sandwich is a type of sandwich made with a flatbread. It consists of sliced cucumbers, tomatoes and olives stuffed between two slices of bread. The Greeks call it tiganithes (Greek: τηγανιτής), which means “a bit of everything”, referring to the mixture of ingredients in this dish.

Ingredients

  • 1 egg
  • 1/2 cup feta cheese
  • 1/2 cup spinach
  • 1/2 cup mushrooms, chopped (optional)

Optional: Add any vegetables that you like! I like to add extra spinach and chunks of bell peppers in my sandwich because it makes for a more colorful presentation on the plate.

Instructions

  • Preheat the oven to 400° F.
  • Heat the tortillas in the oven for 5 minutes, or until they are warmed through and soft enough to spread without breaking apart (but not too soft).
  • Spread the feta cheese over each tortilla, then top with tomatoes, green onions, and olives

Cooking Notes

Cooking time: 8-10 minutes

Cooking temperature: 350°F (175°C)

Tips and notes: The ingredients can be cooked on a grill, in the oven or under the broiler. You can also use your favorite tortilla maker to make them yourself! Just cut out circles of dough using a cookie cutter and place them directly on the grates of your stovetop grill pan or in an ovenproof casserole dish before putting cheese inside each one. Then cook until golden brown – about 5 minutes per side depending on how large you make them (I like mine quite large).

If you don’t have access to these tools then simply melt some butter over medium heat in an electric skillet before adding all other ingredients except for salt & pepper; this will help create crisped edges when flipping them over after cooking has started itself off into success! Finally remember that even though this recipe calls for feta cheese balls instead of slices/blocks like most others do today because we wanted something more portable yet still tasty enough.

Add-ins and Variations

You can add any number of things to your sandwich, from meat and cheese to eggs or avocado.

Make it a vegetarian sandwich by adding lettuce and tomato instead of ham or bacon.

Make it vegan by using hummus instead of mayo on the bread.

Make it gluten-free by using sprouted grain bread instead of regular bread—or even better yet, make your own!

Try making this paleo version with cauliflower rice as an alternative to carbs in this recipe—and if you’re feeling extra daring, try swapping out the tortillas for zucchini pancakes made from grated zucchini flesh rather than flour (they taste just like cornbread!). You could also swap out all other ingredients except for the feta cheese sauce.

Feta Cheese Tortilla Sandwich is best to serve with

  • Bread, olive oil and tomatoes
  • Chicken, lamb or beef
  • Onions, olives and cucumbers
  • Pickles (optional)

Tips

Use a nonstick pan. If you’re cooking this sandwich in a pan, use one that is made of an aluminum or stainless steel material. This will prevent the tortilla from getting too brown and crispy on the bottom, which means your sandwich won’t taste good either!

Use a spatula to flip the sandwich over when it’s done cooking (this should take about five minutes). The key here is not to overcook your cheese filling—if it starts getting dry before you’re finished with everything else (like if there aren’t any tomatoes inside), then just throw away what’s left of it and start over again!

Also don’t try to reheat this thing using microwaves because I’ve tried doing this before myself but I got burned every time so now I know better than anyone else not to try their hand at making another type of cuisine inside those little metal boxes in our homes.
