The Secret to Cooking White Bait with a Crisp Crust

White bait is a delicious, healthy and easy recipe. This is the perfect dish to make if you’re on a budget or don’t have much time to cook. It’s also great for summer picnics or barbecues because it doesn’t require any cooking!

The term “whitebait,” which varies globally, is used to describe the young of numerous fish species. Herring were once the preferred whitebait in the UK, but overfishing drastically decreased the herring stock, thus sprats are now favoured instead since they are more sustainable.

White bait

White bait is a type of fish that can be found in the Mediterranean Sea, and it’s also called “calamari.” This means that white bait is not only tasty but healthy too! White bait has been around for many years now, so you shouldn’t worry about whether or not you’ll like it. In fact, you should go out right now and try some!

An old English phrase for little fish that are frequently floured and deep-fried till crispy is “whitebait.” It’s a popular British snack, and you can eat the entire fish because whitebait is always smaller than your pinky finger. Because the young fish are fragile, you don’t need to clean them or watch out for their bones and fins like you would with larger fish.

Depending on each individual’s appetite, allow between a quarter and a third of a pound per person. For this dish, you’ll need a dipping sauce, and the ideal option is aioli, a creamy, garlicky sauce that pairs nicely with fried fish. Tartar sauce and other mayonnaise-based sauces are very tasty.

Whitebait is a delicious option for an appetizer or as a menu item for a party on game day because it is a casual finger meal. The whitebait, sauce, and beer are all you need in those circumstances. If you want to make a dinner out of whitebait, French fries are a traditional side dish, as they are with most deep-fried fish. They go well with your preferred potato or pasta salads as well.

Ingredients

  • 2 lbs of white bait
  • 3 cloves of garlic, minced or grated (more if you want it really garlicky)
  • 1 onion, chopped or diced (more if you want it really juicy)
  • 1 teaspoon salt (or more if you like your food salty!)
  • 1 teaspoon pepper (or more if you like your food spicy!)

Directions

  • Put all the ingredients in the pan and cook for 20 minutes, until it is cooked through.
  • Serve with lemon wedges on top!

Cooking Notes

  • Cook for 5 minutes at 375°F.
  • Cook for 7 minutes at 350°F.

Tips

  • Use a pan that is large enough to hold all the fish
  • Cooking time will vary depending on the size of the fish, so keep an eye on it as it cooks. You don’t want overcooked white bait!
  • Don’t use a non-stick pan because they can be tricky to clean and may cause some damage over time.
  • The finest little fish are frequently blue anchovies, which are widely available in Asian markets. Whitebait is available year-round in both fresh and frozen forms.
  • Before cooking, frozen whitebait needs to defrost overnight and be wiped dry.
  • The ideal way to eat fried whitebait is hot and fresh. Any leftovers should be refrigerated and eaten within one or two days.

This recipe is for a whole fish but if you want to cut it up into smaller pieces then use the same method with some extra seasoning or spices. You can also freeze leftovers after cooking and save them for later

White bait can be stored in a variety of ways, depending on the intended application. To store white bait for longer periods of time:

  • Store in the fridge or freezer.
  • Store in your pantry.
